Gluten Free Apple Pie

Gluten Free Apple Pie
This contribution comes from Ms. JoAnn Siegel.  She is a spectacular cook and she claims to not have any recipes for all the wonderful dishes she makes.  She goes by feel and years of experience being a scrappy cook.  I had tried her normal Apple Pie with Gluten and I must admit it is the BEST Applie Pie I have ever had.  I wanted to see if it was possible to make an Apple Pie with a Gluten Free Pie Crust and JoAnn was very receptive to the idea.  I forced her to sit down and give us the recipe for her Gluten Free Apple Pie.

Ingredients:
Gluten Free Pie Crust (Will update the blog later with the directions)
6 Large Gala Apples (Peeled, Cored, and sliced 1/4")
1-2/3 cups Sour Cream
2 Organic Eggs
1-1/4 cup Organic Brown Rice Syrup or Agave
1/2 teaspoon Salt
2 teaspoon Vanilla
1/3 cup Brown Rice Flour

Mix all the ingredients together, pour over the the apples, then spoon all the ingredients into the unbaked pie crust.  Bake at 350 for 30-40 minutes.  During the last 15 minutes of baking you are going to add the "Topping".

"Topping Recipe"
1/3 cup Brown Rice Flour
1 tablespoon Cinnamon
1/2 stick Organic Butter
1/ cup chopped Walnuts

Mix everything together in a bowl, add the 1/2 stick of butter (melted), add the walnuts last.  Use a butter knife to make the topping granular, pack on top of pie with hand.

This was the first attempt at making a Gluten Free Apple Pie and there are a couple of things I would like to change for the next pie.  One thing she noticed is that the Pie Crust was not very pliable.  Next time she makes the pie we are going to add Xanthan Gum to make it more elastic.  Ideally I would like to find a substitute for Sour Cream.  But then again, I eat so clean these days that I cheat on my diet when I eat my mom's Indian Food and when someone wants to offer a healthy desert alternative.  As my old boss used to say, "If you ain't cheatin' you ain't tryin".   So I am adding Ms. Joann's Gluten Free Apple Pie to my cheat day!
