Paleo Banana Crumb Muffins fresh out of the oven! |
1 1/2 cup Almond Flour
1 tsp Baking Soda
1/2 tsp Salt
3 Bananas
1 tbs Raw Honey
1 Egg, beaten
5 tbs Butter, melted
1/3 cup Raw Sunflower Seeds
Crumbs:
2 tbs Almond Flour
1/8 tsp Ground Cinnamon
1 tbs Butter
Preheat the oven to 350. In a bowl mix the almond flour, baking soda, and salt. In a separate bowl mash the bananas and mix in the honey, egg, and melted butter. Pour the banana mixture into the flour and stir together. Fold in the sunflower seeds. Spoon the batter into paper lined muffin pan cups, two thirds full for each cup.
For the crumbs: Mix together almond flour, cinnamon, and butter until mixture becomes coarse and clumps together, then sprinkle on top of each muffin.
Bake for 17 minutes or until tops turn golden brown.
I really liked the flavor and the muffins were very moist. I enjoyed them during the evening, but I think they were better the following morning with my coffee. What's not to love about muffins that are Gluten Free, Low in Carbs, and taste Incredible!??! As if that is not enough of a reason to make these muffins, we even got "Three Kitcheneer Approved" on this recipe. We will take any accolades we can get!

could you substitute the butter for agave or honey?
ReplyDeleteI thought agave had a high glycemic index spike so I avoided it. In comparison to honey it is better. So I will try to substitute agave where I can in my cooking. Here is a list for anyone interested in the glycemic index of sweeteners:
