Paleo Shrimp and Scallops with Kelp Noodles

Greetings to all my friends and followers....or follower if you will!  We have gone thru many changes with our new company at RejuvenateYou and I haven't had a chance to showcase any of our Paleo friendly dishes.  But finally I got some time to get various things in order, and one was working on our new website and the Blog.  So let's get moving to my newest creation.

Shrimp and Scallops with Kelp Noodles

1 pound Large Shrimp
1/2 pound Scallops
1 Large Onion
2 Tomatoes
2 tbsp Garlic
Salt & Pepper for taste
1/4 cup White Wine
1 Lemon
2 tbsp Coconut Oil
1 Package Kelp Noodles

Clean and devein the shrimp if you so choose and set aside.  Heat up the saute pan with 2 tbsp of coconut oil over medium heat and add the large onion, tomatoes, garlic, salt/pepper and sautee for about 5-7 minutes.  Add the shrimp and scallops and cook for about 5 minutes.  Combine 1/4 cup White Wine, 1/4 cup Water, and 1 Lemon (Squeeze).  Bring to a boil and let simmer and cook for another 5-7 minutes until shrimp are done.

The Kelp Noodles are VERY difficult to make so get ready to take notes.  You open the package, rinse...and you are DONE!  Made only of Kelp, fat-free, gluten-free and very low in carbohydrates and calories.  I got this from our friends over at Richard's Food Emporium and they are fantastic!


When the shrimp and scallops were done I combined it with my Kelp Noodles and dinner was served.  I also added Cayenne Pepper to my dish but not everyone likes spicy food.  Very easy to make and it was delicious.  Just make sure you don't overcook the shrimp and scallops.
